Since I decided to try a Vegan Cleanse, my main interest was to eat real & clean food which is vitamin & protein rich.  I then came up with this nourishing loaded vegetable soup including the protein of organic beans.  Then, I decided to up my protein even further by adding pure collagen peptides protein powder to this soup recipe since it dissolves so easily and is tasteless, it makes it effortless to get your protein intake.  Therefore, I am now sharing this delicious, comforting & high protein soup with you all!

Here we go!

Ingredients:

2 small zucchini, diced

2 carrots, peeled & diced

2 celery stalks, diced

2 whole garlic cloves, crushed

1 cup turnips, diced

1 cup butternut squash, diced

2 small white potatoes, diced

4 frozen spinach nuggets or chopped spinach

1/2 cup diced tomatoes

900ml organic vegetable stock

1 inch cube of fresh ginger, peeled & grated

1 can of organic beans of your choice (I used Pinto beans for this recipe)

1 tsp. sea salt

1/2 tsp. black pepper

1/2 – 1 scoop of Collagen Peptides Protein Powder (per bowl), to be added once you add the soup to the bowl

Directions:

Bring a large pot of water to boil, leaving enough room to add all the veggies and stock.

Meanwhile, chop up all your vegetables.

Add all your diced veggies & stock except for the spinach, beans & collagen protein to the pot.

Once water begins to boil, add your spices: salt, pepper & grated ginger

Cover & simmer for 45 min. to 1 hour or until veggies are fork tender.  Halfway through cooking, add the beans & spinach

Optional:  Serve with cooked Italian style rice

Serve Hot and now add the Collagen Protein Powder to your bowl of soup!
