My new favourite quick meal is definitely “Eggs & Avocado on Toast”! It’s perfect for any meal of the day and is so satiating and delicious not to mention it’s high in protein & good fats!
Life gets too busy sometimes to make complicated meals. This healthy meal can be ready in less than 10 minutes. I love to have it before work since it holds me for hours!
Ingredients:
2 large free run eggs
1/2 ripe avocado (mashed)
2 slices of whole grain toastbread
1 scoop Further Food Collagen Peptides protein powder
Dash of Sea Salt & Black Pepper
Sprinkled Turmeric powder
Optional to add your choice of shredded cheese to the mix
1 tbsp. coconut oil
Directions:
Start off by toasting your bread and placing mashed avocado over top. Optional to add additional dash of sea salt over the avocado. Put aside.
In a small mixing bowl, whisk the eggs along with the salt, pepper, collagen & cheese (optional)
Heat 1 tbsp. coconut oil to a small skillet and add egg mixture, keeping the heat on low.
Keep mixing and scrambling the eggs until you reach the texture you prefer (basically should take about 1 minute) of cooking time.
Sprinkle turmeric powder over the eggs and add it to the avocado on toast.
