1 ½ CUPS BROCCOLI, CHOPPED
1 CUP QUINOA, RINSED & DRAINED
1 GARLIC, CRUSHED
1 TEASPOON SEA SALT
DASH OF BLACK PEPPER
2 EGGS
1 CUP CHEDDAR CHEESE, SHREDDED
DIRECTIONS
PREHEAT OVEN TO 350 DEGREES F.
COOK THE QUINOA ACCORDING TO PACKAGE DIRECTIONS, ADDING THE GARLIC
ADD THE BROCCOLI TO THE QUINOA AT THE LAST 10 MINUTES OF COOKING THE QUINOA
ADD SALT & PEPPER
LET COOK, REMOVE ANY REMAINING WATER AND LET COOL
GREASE MUFFIN TINS AND ADD THE MIXTURE TO THE MUFFIN TINS
ADD SHREDDED CHEESE ON TOP
BAKE AT 350 DEGREES F. FOR 15-20 MINUTES
