1 CAN OF CRUSHED TOMATOES
1 CAN OF BLACK BEANS (RINSED & DRAINED)
1 TEASPOON SEA SALT
DASH OF BLACK PEPPER
1 CUP OF VEGETABLE STOCK
1 TABLESPOON OLIVE OIL
DIRECTIONS
IN A MEDIUM SIZE FRYING PAN, SAUTEE THE ONION IN OLIVE OIL TILL SOFTENED, ABOUT 5 MINUTES
ADD THE CORN, BLACK BEANS AND CRUSHED TOMATOES, MIXING WELL
ADD THE QUINOA, VEGETABLE STOCK AND SPICES
COVER & SIMMER FOR 20 MINUTES UNTIL DONE
