1 CUP COCONUT FLOUR

1 TEASPOON SEA SALT

1 TEASPOON BAKING SODA

1 CUP UNSWEETENED APPLESAUCE

6 EGGS

2 TEASPOONS VANILLA

¼ CUP COCONUT OIL

1 TABLESPOON CHIA SEEDS

1 CUP FRESH BLUEBERRIES

CINNAMON, SPRINKLED

2 TABLESPOONS BROWN RICE SYRUP

1 RIPE BANANA, MASHED

DIRECTIONS

PREHEAT OVEN TO 350 DEGREES F.

IN A LARGE MIXING BOWL, ADD THE FLOUR, SALT AND BAKING SODA AND WHISK WELL

IN A SMALLER MIXING BOWL, ADD THE EGGS, WHISKING WELL

MASH THE BANANA WITH THE VANILLA AND ADD TO THE EGG MIXTURE, MIXING WELL

ADD THE BROWN RICE SYRUP AND COMBINE

ADD THE EGG MIXTURE TO THE FLOUR MIXTURE, MIXING WELL BUT NOT OVERMIXING

ADD THE CHIA SEEDS AND APPLESAUCE, MIXING WELL

PLACE ON GREASED MUFFIN TINS AND SPRINKLE THE CINNAMON ON TOP

BAKE FOR 25 MINUTES
