INGREDIENTS

1 CUP CREAMY CASHEW BUTTER

2 VERY RIPE BANANAS

1 EGG

1 TBSP. VANILLA

¼ TSP. BAKING SODA

PINCH OF SALT

¼ CUP CASHEW MILK

DARK CHOCOLATES PIECES CUT UP (100 g)

DIRECTIONS

PREHEAT OVEN TO 350 DEGREES F.

IN A BLENDER, COMBINE ALL INGREDIENTS EXCEPT FOR THE CHOCOLATE.  YOU NEED TO STOP AND MIX A FEW TIMES TO MAKE SURE EVERYTHING GETS COMBINED WELL.  IF BATTER IS TOO THICK, ADD A BIT MORE MILK.

SPOON BATTER INTO GREASED MUFFIN TINS ADDING SOME OF THE CHOPPED CHOCOLATE ON TOP.  I FILLED MINE LEVEL TO THE TOP AND GOT 9 MUFFINS FROM THE BATTER.  YOU CAN MAKE THEM SMALLER SO THAT YOU CAN MAKE 12.

BAKE IN OVEN FOR 20 MINUTES.

NOTE:  IF YOU MAKE THEM SMALLER, BAKE FOR ABOUT 15 MINUTES.  CHECK THE INSIDE WITH A SPAGHETTI STRAND TO MAKE SURE IT COMES OUT CLEAN. LET COOL COMPLETELY AND REMOVE FROM PAN AND ENJOY!
