2 BANANAS

2 EGGS

½ CUP BROWN RICE FLOUR

2 TBSP. CREAMY ALMOND BUTTER

1 TSP. CINNAMON

2 TBSP. RAW CACAO POWDER

1 TSP. BAKING POWDER

1/4 CUP ALMOND MILK (UNSWEETENED)

½ CUP DARK CHOCOLATE CHIPS

DIRECTIONS

PLACE ALL INGREDIENTS EXCEPT FOR CHOCOLATE CHIPS INTO A BLENDER AND BLEND UNTIL SMOOTH

PLACE MIXTURE IN A MEDIUM SIZE BOWL AND ADD THE MOST OF THE CHOCOLATE CHIPS (RESERVE THE REST FOR TOPPING), MIX WELL.  AT THIS POINT, CHECK TO SEE YOU HAVE THE RIGHT TEXTURE, IF THE BATTER IS TOO THIN, FOLD IN A BIT MORE BROWN RICE FLOUR UNTIL IT’S TO YOUR LIKING.  IF BATTER IS TOO THICK, ADD A BIT MORE MILK.

HEAT UP 1 TBSP. COCONUT OIL IN A HOT GRILL AND COOK PANCAKES UNTIL THE SIDES HAVE A BIT OF COLOUR TO THEM, THEN FLIP OVER AND COOK FOR ABOUT ANOTHER 1 – 2 MINUTES ON LOW TO MEDIUM HEAT

*YOU CAN ADD MORE CHOCOLATE CHIPS ON TOP BEFORE YOU FLIP THEM AS WELL!

SERVE WITH PURE MAPLE SYRUP AND YOUR CHOICE OF FRESH FRUIT

MAKES ABOUT 8-10 MEDIUM SIZE PANCAKES!
