INGREDIENTS

2 EGGS (I USE ORGANIC OR FREE RUN)

1 CUP BROWN RICE FLOUR

1/3 CUP ALMOND MEAL

2 TSP. BAKING POWDER (ALUMINUM FREE)

PINCH OF SEA SALT

1 CUP BUTTERMILK (1%)

1 TBSP. GRASS FED BUTTER, MELTED

1 TSP. PURE VANILLA

COCONUT OIL (JUST FOR THE GRILL)

 

DIRECTIONS

WHISK THE DRY INGREDIENTS IN A MEDIUM SIZE BOWL:  THE FLOURS, BAKING POWDER AND SALT

WHISK THE WET INGREDIENTS IN ANOTHER BOWL:  THE EGGS, BUTTERMILK, BUTTER AND VANILLA

COMBINE THE WET INGREDIENTS INTO THE DRY AND COMBINE WELL.  LET SIT 5 MINUTES

HEAT UP YOUR GRILL, ADDING COCONUT OIL TO THE GRILL.

TIP:  IF YOUR BATTER IS TOO THIN, ADD A BIT MORE BROWN RICE FLOUR.  IF YOUR BATTER IS TOO THICK, ADD A BIT OF WATER

ADD YOUR BATTER TO THE GRILL, FLIPPING OVER ONCE YOU SEE TINY BUBBLES ON TOP

MAKES ABOUT 10-12 AVERAGE SIZE PANCAKES
