INGREDIENTS

1 CUP BROWN RICE FLOUR

1/3 CUP ALMOND MEAL

2 EGGS (PREFERABLY ORGANIC)

2 TSP. BAKING POWDER (ALUMINUM FREE)

1/4 TSP. BAKING SODA

1 TSP. CINNAMON

1 TBSP. CHIA SEEDS

1 TSP. PURE VANILLA

PINCH OF SEA SALT

1 CUP BUTTERMILK (1%)

1 TBSP. GRASS FED BUTTER, MELTED

COCONUT OIL (JUST FOR THE GRILL)

 

DIRECTIONS

WHISK THE DRY INGREDIENTS IN A MEDIUM SIZE BOWL:  THE FLOURS, BAKING POWDER, BAKING SODA, SALT, CINNAMON & CHIA SEEDS

WHISK THE WET INGREDIENTS IN ANOTHER BOWL:  THE BUTTERMILK, EGGS, VANILLA & MELTED BUTTER

COMBINE THE WET INGREDIENTS INTO THE DRY AND COMBINE WELL.  LET SIT 5 MINUTES

HEAT UP YOUR GRILL, ADDING COCONUT OIL OR SPRAY TO THE GRILL

TIP:  IF BATTER IS TOO THICK, ADD A BIT MORE BUTTERMILK.  IF IT’S TOO WATERY, ADD A BIT MORE BROWN RICE FLOUR

ADD YOUR BATTER TO THE GRILL, FLIPPING OVER ONCE YOU SEE TINY BUBBLES ON TOP
