3 CUPS SWEET POTATOES (CUBED)

½ CUP GRATED PARMIGGIANO CHEESE (OPTIONAL)

1 CUP SPINACH (CHOPPED)

5 SPRIGS OF CHIVES (CHOPPED)

DIRECTIONS

PREHEAT OVEN TO 400 DEGREES F.

BOIL SWEET POTATOES IN A MEDIUM SIZE POT IN SALTED BOILING WATER UNTIL FORK TENDER

DURING THE LAST 5 MINUTES OF BOILING, ADD THE CHIVES & SPINACH TO THE POT, DRAIN

PLACE BACK IN POT AND ADD SALT AND PEPPER AND MASH TOGETHER WELL

PLACE IN A GREASED SMALL BAKING PAN AND SPREAD EVENLY, ADDING CHEESE ON TOP

BAKE FOR ABOUT 30 MINUTES OR UNTIL SIDES LOOK BROWNED
