Give your body a collagen boost while eating dessert (Collagen in a Muffin)! I came up with this sustainable breakfast muffin including bananas, oats, protein powder, almond butter with no added sugars just pure healthy ingredients.

I don’t believe in adding additional refined sugars in baked goods.  There are plenty of natural sugars from the bananas and there is sweetness from the chocolate chips.  I find these muffins are great for “on the go”, whether it’s for breakfast or a snack to hold you until dinner.  The high protein in the collagen peptides will do just that!  I personally love these muffins as a post workout snack.

Here is the recipe:

MAKES 10 – 12 MUFFINS!

Ingredients:

1 cup quick cooking oats (preferably organic)

1 cup smooth & creamy almond butter

3 very ripe bananas, mashed

1 large egg

1 tsp. pure vanilla extract

1 tsp. baking powder (aluminum free)

Pinch of sea salt

1/2 cup unsweetened almond milk

1 scoop Further Food Collagen Peptides Protein

1/3 cup mini semi sweet chocolate chips (stirred into the mix + additional for topping)

Sliced blanched almonds, optional (sprinkled on top)

Directions:

Preheat oven at 350 degrees F.

Combine everything into a blender except for the oats and chocolate chips, blend until smooth

Stir in the oats & 1/3 cup chocolate chips (mixture will be more thin than thick)

Pour batter onto well greased muffins tins (fill to the top).

Bake for 15 minutes or until tester comes out clean.

Let cool while in the hot muffin tins for an additional 15 minutes.

Remove carefully and enjoy!
