I am truly in love with “protein balls” also known as No Bake Energy Bites!  They are so tasty and healthy, made with only pure ingredients with a touch of sweetness from the honey and chocolate chips with no additional refined sugar added.  These protein bites are also gluten free, dairy free, nutritious, fiber rich and high in protein!

Since I prefer not to eat heavily before a workout, I find these are absolutely a perfect pre workout “on the go” snack!

RECIPE

Ingredients:

1 cup organic quick cooking oats

1/3 cup shredded unsweetened coconut

1/4 cup chopped walnuts

1/2 cup smooth & creamy almond butter

1 tbsp. liquid coconut oil

1 tbsp. organic flax seeds

1/2 cup organic honey

1 tsp. pure vanilla

1/2 cup mini chocolate chips (I used semi sweet mini chocolate chips)

1 scoop Further Food Collagen Peptides Protein Powder

Directions:

In a medium size mixing bowl, combine all the dry ingredients together, then add all your wet ingredients, mixing well to combine and pressing down with a spoon till it binds.

Cover & Chill for a minimum of 30 minutes to 1 hour before forming into balls (this prevents the mixture to not be as sticky to work with).

Once chilled, form 1 inch round balls and refrigerate once again for an additional 2 hours.

Serve and Enjoy!

Tip:  Batter will be sticky, therefore, I find that when forming the balls, it’s best to use your fingers rather your palms while wetting your hands every so often.

Store in refrigerator in an airtight container for 5 days.  To keep it fresh longer, freeze them!
