Delicious & Nutritious Protein Meal to start off your day!
When it comes to yogurt, I always choose plain and add my own ingredients for sweetness rather than choosing high sugary varieties. This is how I started creating my own “yogurt parfait” creations. Rather than buying sweetened ready to eat yogurts, I now use plain Greek yogurt with very low sugar and add a variety of delicious & healthy toppings including fresh fruits, flax or chia seeds, nuts or seeds and/or granola. There are so many varieties.
The recipe I will be sharing today includes berries, flax, granola and fresh figs.
RECIPE:
PROTEIN YOGURT PARFAIT (1 serving)
INGREDIENTS:
3/4 cup plain yogurt (preferably greek yogurt with low sugar)
1 scoop (Further Food Collagen Protein Powder)
1 tsp. flax seeds
1/4 tsp. cinnamon
1/2 cup granola
1/4 cup fresh blueberries
1/4 cup fresh blackberries
2 fresh figs (thinly sliced)
banana slices (one third)
Optional: drizzled organic honey for additional sweetness
DIRECTIONS:
Mix together the yogurt, protein powder, cinnamon & flax seeds in a small bowl
Using an 8oz glass, start to layer: 1/3 of the yogurt mixture at the bottom of your serving glass
Add the blackberries and sprinkle some of the granola
Layer another 1/3 of the yogurt mixture
Add the banana slices and more granola
Final topping used is the remaining yogurt mixture along with the blueberries and granola
Drizzle with honey
Serve immediately to avoid the granola getting too soft (best if it’s crunchy)!
