INGREDIENTS

1 BUNCH SWISS CHARD (SERVES 2 PEOPLE)

1 WHITE ONION, THINLY SLICED

1 CLOVE GARLIC, CUT IN HALF

1 TEASPOON SEA SALT

BLACK PEPPER TO TASTE

3 TABLESPOONS OLIVE OIL

1 CAN OF WHITE BEANS, RINSE AND DRAINED (I PREFER EITHER NAVY,  PINTO OR WHITE KIDNEY)

DIRECTIONS

  • FIRST YOU WILL NEED TO REMOVE SOME OF THE WHITE STEMS AND CHOP UP THE REST
  • WASH WELL, THEN BLANCHE THE SWISS CHARD (BOILING IT IN WATER FOR 2 MINUTES) AND DRAIN
  • (RESERVE THE WATER IF MAKING THIS DISH AS A SOUP)
  • HEAT UP A MEDIUM SIZE FRYING PAN WITH THE OIL, GARLIC AND ONION
  • SAUTEE UNTIL SOFT, ABOUT 3-5 MINUTES, STIRRING OFTEN
  • THEN ADD THE SWISS CHARD AND BEANS ALONG WITH THE SALT AND PEPPER
  • COVER AND COOK UNTIL TENDER (ABOUT 30 MINUTES)

*IF YOU WOULD LIKE TO MAKE THIS DISH INTO A SOUP, JUST ADD SOME OF THE WATER THAT YOU BLANCHED THE SWISS CHARD IN SINCE IT CONTAINS THE NUTRIENTS FROM THE VEGETABLE.
