3 EGGS (2 WHOLE & 1 YOKE)
1 VEGETABLE BOUILLON CUBE
1 TEASPOON SEA SALT
BLACK PEPPER TO TASTE
¼ CUP GRATED PARMESAN CHEESE
1 CUP SMALL PASTINA NOODLES
¼ CUP BREADCRUMBS
½ CUP PARSLEY CHOPPED
DIRECTIONS
- BOIL A MEDIUM SIZE POT OF WATER (ABOUT 10 CUPS) WITH CHOPPED PARSLEY AND VEGETABLE BOUILLON
- MEANWHILE: IN A BOWL, ADD 3 EGGS (2 WHOLE EGGS & 1 YOKE ONLY)
- ADD ¼ CUP OF GRATED CHEESE AND ¼ CUP OF BREADCRUMBS, SALT & PEPPER
- NOW MIX WELL WITH WHISK (JUST LIKE SCRAMBLING EGGS)
- ONCE THE WATER BOILS, ADD THIS EGG MIXTURE INTO THE POT AND KEEP STIRRING WITH WHISK TO LOOSEN UP THE EGGS FINELY
- THEN ADD YOUR TINY NOODLES (IF YOU PREFER) ABOUT ½ TO 1 CUP, COOK THE NOODLES IN THE SAME POT FOLLOWING DIRECTIONS ON THE PASTA LABEL
- ADD MORE SALT IF NEEDED
MAKES ENOUGH FOR 3-4 PEOPLE
