1 package of mini pork sausage or 4 regular size
2 Bunches of Rapini
2 cloves garlic, cut in half
1 teaspoon sea salt
Black Pepper to taste
Place sausages in a medium size pan for roasting. Add about ½ cup of grapeseed or sunflower oil.
Cover with Foil and Bake at 400 Degrees F. for about 1 hour to 1.5 hours, turning once about halfway through cooking time.
For the Rapini:
Cut some of the stems from the Rapini, keeping the leaves that are attached to the Broccoli part of the vegetable, wash and blanche rapini for about 2 minutes and drain.
Then heat up about 2-3 tbsp. of olive oil in a medium size pan, adding the garlic
Sautee until the garlic sizzles, but keep heat low so garlic doesn’t burn, then add your blanched rapini
Add salt and pepper and cook covered until the rapini are soft, about 10 minutes.
