INGREDIENTS

450g Linguini Pasta

1 Package of uncooked frozen shrimp that has been deveined)

½ cup spinach, chopped

5 cloves garlic, sliced

½ cup olive oil

1 teaspoon sea salt

Black pepper to taste

1 cup Low Sodium Vegetable Broth

Chili Flakes (optional)

 

DIRECTIONS

Heat up a large pot of boiling water

In the meantime, place olive oil in a medium size frying pan

Heat and add garlic, cooking for about 2 minutes on low heat, careful not to burn the garlic

Add the washed and drained shrimp to the pan

Season with Salt & Pepper

Turn shrimp once and add the spinach and vegetable broth

Cook for about 10 minutes, until shrimp is opaque.  Do not overcook the shrimp.  Turn off heat.

When water begins to boil, season with salt and add your linguini pasta, stirring often and adding salt to your preference

Cook until al dente, usually about 7-10 minutes, depending on the packaging directions

Drain and place pasta into the shrimp mixture

Tip:  You can add chili flakes at the end or when cooking the shrimp
