1 CUP (CAULIFLOWER, CHOPPED)

2 EGGS (BEATEN)

GRATED PARMESAN CHEESE (1/4 CUP)

MOZZARELLA CHEESE (SHREDDED) (1/2 CUP)

1 TSP. OF SALT

¼ TSP. BLACK PEPPER

1 TSP. OREGANO, OPTIONAL

DIRECTIONS

PREHEAT OVEN TO 400 DEGREES F.

GRATE CAULIFLOWER IN EITHER A FOOD PROCESSOR OR BLENDER, PUT ASIDE

IN A MEDIUM SIZE PAN, COOK THE QUINOA ACCORDING TO PACKAGE DIRECTIONS, DURING THE LAST FEW MINUTES OF COOKING, ADD THE GRATED CAULIFLOWER AND SPICES, DRAIN ANY REMAINING WATER AND LET IT COOL

ONCED COOLED, ADD 2 BEATEN EGGS, GRATED CHEESE AND HALF OF THE MOZZARELLA, MIX WELL

ADD MIXTURE TO A GREASED A 8 x 10 OVEN PAN AND TOP IT OFF WITH THE REST OF THE MOZZARELLA

COVER WITH FOIL AND BAKE FOR 20 MINUTES AND BROIL FOR THE LAST 1-2 MINUTES ON THE LOWER RACK
