INGREDIENTS

1 CUP DRY OATMEAL (GLUTEN FREE, OPTIONAL)

1/3 CUP SHREDDED UNSWEETENED COCONUT

1/2 CUP ALL NATURAL PEANUT BUTTER

1 TABLESPOON FLAX OIL (ORGANIC)

1 TABLESPOON CHIA SEEDS

1/3 CUP RAW HONEY

1 TEASPOON PURE VANILLA

1/2 CUP DARK CHOCOLATE CHIPS

 

DIRECTIONS:

STIR ALL INGREDIENTS TOGETHER IN A MEDIUM SIZE BOWL UNTIL THOROUGHLY MIXED.  COVER AND LET CHILL IN THE REFRIGERATOR FOR HALF AN HOUR.

ONCE CHILLED, ROLL INTO BALLS.  STORE IN AN AIRTIGHT CONTAINER AND KEEP REFRIGERATED FOR UP TO 1 WEEK.

1 INCH DIAMETER BALLS MAKE ABOUT 20-25 BALLS.  I MADE MINE SLIGHTLY BIGGER AND GOT ABOUT 15 BALLS.
