INGREDIENTS

6 LARGE POTATOES

2 CELERY STALKED CHOPPED

2 CARROTS CHOPPED

½ CUP PARSLEY CHOPPED

1 MEDIUM RED ONION CHOPPED (OPTIONAL)

3 EGGS (BOILED & CHOPPED)

1 TEASPOON SEA SALT

BLACK PEPPER TO TASTE

PAPRIKA, SPRINKLED

500 ML REAL MAYONNAISE

DIRECTIONS

  • BOIL ABOUT 6 LARGE POTATOES
  • DRAIN AND COOL AND CUT INTO SMALL CHUNKS
  • ADD CHOPPED CELERY, CARROTS, PARSLEY, WHITE ONION AND 3 CHOPPED BOILED EGGS
  • ONCE POTATOES HAVE COOLED, PLACE IN A LARGE BOWL
  • ADD DICED VEGGIES AND ADD 500ML OF REAL MAYONNAISE, SALT, PEPPER AND PAPRIKA.

REFRIGERATE OVERNIGHT (TASTES BETTER THE NEXT DAY)

*You can substitute mayonnaise for miracle whip salad dressing for a lighter option
