1 MEDIUM ONION, CHOPPED

¼ CUP OF GRAPESEED OIL

3/4 CUP PITTED WHOLE BLACK OLIVES

3/4 CUP PICKLED ARTICHOKES (DRAINED)

DIRECTIONS

  • TO REDUCE THE FAT CONTENT, I USUALLY REMOVE THE SKIN FROM THE DRUMSTICKS, WASH WELL
  • PLACE DRUMSTICKS IN A 9X13 BAKING DISH WHICH HAS BEEN GREASED
  • SEASON WITH DRUMSTICKS WITH THE SALT, PEPPER, PAPRIKA, OREGANO AND GARLIC POWDER
  • ADD THE ONION, OLIVES & ARTICHOKES
  • ADD MORE OIL ON TOP (ABOUT 2 TABLESPOONS) AND MARINATE WELL, MASSAGING MEAT WELL
  • BAKE IN A PREHEATED 400 DEGREES F. OVEN FOR ABOUT 1 1/2 HOURS, COVERED IN FOIL
  • REMOVE THE FOIL, THE LAST 15-20 MINUTES OF BAKING, IF YOU PREFER THE CHICKEN TO BE A LITTLE CRUNCHIER
