INGREDIENTS

1 ONION, CHOPPED

2 CLOVES GARLIC, CHOPPED

2-3 CARROTS, DICED

2 CELERY STALKS, DICED

½ CUP PARSLEY, CHOPPED

1 SMALL CAN OF DICED TOMATOES OR 1 TBSP. TOMATO PASTE

2 CUPS BROWN LENTILS

1 VEGETABLE BOUILLON CUBE (OPTIONAL)

1 TEASPOON SEA SALT

BLACK PEPPER TO TASTE

DIRECTIONS

  • SORT THROUGH THE LENTILS AND REMOVE ANY THAT LOOK LIKE LITTLE ROCKS OR AN ODD COLOUR, THEN BOIL, RINSE AND DRAIN THE LENTILS
  • NOW ADD IT TO A FILLED LARGE POT OF BOILING WATER
  • ADD THE ONION, GARLIC, PARSLEY, CARROTS, CELERY AND SPICES TO THE POT
  • ADD THE TOMATO SAUCE OR PASTE
  • BRING TO A BOIL AND SIMMER FOR AT LEAST 1 HOUR
