INGREDIENTS
3 EGGS
1 SMALL RED ONION, CHOPPED
1 CUP SPINACH, CHOPPED
1 TOMATO, CHOPPED
1 TEASPOON SEA SALT
BLACK PEPPER, TO TASTE
1 TABLESPOON OLIVE OIL
COOKING SPRAY
DIRECTIONS
- IN A MEDIUM SIZE MIXING BOWL, BEAT THE EGGS AND PUT ASIDE
- HEAT OIL IN A SMALL FRYING PAN, ADDING THE ONION, COOK FOR 2-3 MINUTES ON LOW HEAT
- ADD THE SPINACH AND COOK UNTIL WILTED, SEASON WITH SALT AND PEPPER
- TURN OFF HEAT AND LET COOL
- ADD THE TOMATO, MIX WELL
- ADD THIS TO THE EGG MIXTURE AND MIX WELL
- GREASE THE MUFFIN TINS WITH COOKING SPRAY
- SPOON AND FILL THE MUFFIN TINS

BAKE IN A PREHEATED 350 DEGREES F. OVEN FOR 30 MINUTES.
