3 EGGS

1 SMALL RED ONION, CHOPPED

1 CUP SPINACH, CHOPPED

1 TOMATO, CHOPPED

1 TEASPOON SEA SALT

BLACK PEPPER, TO TASTE

1 TABLESPOON OLIVE OIL

COOKING SPRAY

DIRECTIONS

  • IN A MEDIUM SIZE MIXING BOWL, BEAT THE EGGS AND PUT ASIDE
  • HEAT OIL IN A SMALL FRYING PAN, ADDING THE ONION, COOK FOR 2-3 MINUTES ON LOW HEAT
  • ADD THE SPINACH AND COOK UNTIL WILTED, SEASON WITH SALT AND PEPPER
  • TURN OFF HEAT AND LET COOL
  • ADD THE TOMATO, MIX WELL
  • ADD THIS TO THE EGG MIXTURE AND MIX WELL
  • GREASE THE MUFFIN TINS WITH COOKING SPRAY
  • SPOON AND FILL THE MUFFIN TINS

BAKE IN A PREHEATED 350 DEGREES F. OVEN FOR 30 MINUTES.
