INGREDIENTS

1 ONION CHOPPED

2 CELERY STALKS

4 LARGE PIECES OF BONELESS COD

1 TABLESPOON FLOUR

1 CAN DICED TOMATOES

CHICKEN OR VEGETABLE BROTH

½ CUP CHOPPEDPARSLEY

½ CUP OF BLACK OLIVES

1 CUP WHITE WINE

6 LARGE POTATOES

1 TEASPOON SEA SALT

BLACK PEPPER TO TASTE

 

DIRECTIONS

  • SAUTEE ONION & CELERY
  • SLICE POTATOES THIN AND ROUND AND ADD TO PAN
  • SPRINKLE A LITTLE FLOUR AND SEASON WITH SALT AND PEPPER
  • ADD WATER AND 1 CAN OF DICED TOMATOES
  • FILL WITH BROTH AND ADD 1 CUP OF WHITE WINE

WHEN POTATOES ARE TENDER, ADD THE COD, PARSLEY AND BLACK OLIVES. COOK FOR ANOTHER 30 MINUTES UNTIL ALL THE FLAVOURS COME TOGETHER.
