We all love the taste of a homemade dip for snacking.  My favourite are salsa and avocado dips which is how I came up with this recipe.  I combined the two and this was the result!  Delicious, tasty, healthy, high protein & vegetarian.  I also decided to add 1 scoop of collagen protein powder to make this dip extra satiating.  Collagen protein has so many health benefits so why not add it to your favourite recipes.

Serve with: baked tortilla chips, blue corn chips, pita chips or even as a side dish to eggs, meat or fish.  Get creative!

4 tomatoes, diced

1 green pepper, diced & seeds removed

1 red pepper, diced & seeds removed

1/2 red onion, diced

1/4 cup flat leaf parsley, finely chopped

1/4 cup Extra Virgin Olive Oil (EVOO)

1 scoop Further Food Collagen Protein Powder

1 ripe avocado, diced

1/2 lemon, squeezed

1 tsp. Sea Salt

1/2 tsp. Black Pepper


Combine all ingredients in a medium size bowl, add seasoning and EVOO, stir well to combine.

Cover and refrigerate until ready to use

Store in an airtight container for 4-5 days in the refrigerator
