choc pudding

During the summer,  that’s when I enjoy cool & refreshing desserts.  I try to avoid using the oven in this heat which is why I like to come up with dessert recipes which do not involve baking but will satisfy both my chocolate craving & sweet tooth.

My new favourite crave is using DARK CHOCOLATE in my recipes, I have finally stopped using milk chocolate because it’s so unhealthy and due to the fact that it is high in refined sugars.  I aim to use at least 60% dark chocolate because of it’s antioxidant benefits and mainly because it’s very nutritious.  Another type of healthy chocolate ingredient that I also love to use when baking is “organic chocolate raw cacao powder” (it’s basically a Superfood with vitamins & minerals).

If you are looking for a refreshing cool dessert this summer and want to only use natural healthy ingredients that doesn’t involve any baking, I am sure you will enjoy this new recipe.  I try to eliminate added refined sugars as well as dairy in almost all my dessert recipes.  This recipe is “antioxidant rich” and full of healthy good fats, it is also a GUILTFREE DESSERT which makes it even better.

MY DOUBLE CHOCOLATE AVOCADO PUDDING RECIPE:

(Serves 1 large portion as show on image or 2 average portions)

Double the recipe if you want more.

Ingredients

200 ml organic coconut milk (1/2 can) (chilled for 2 hours in refrigerator)

1 very ripe avocado

100 g of dark chocolate (60% or higher) chopped & melted

1 tbsp. raw cacao powder

2 tbsp. 100% pure maple syrup

1/2 tsp. pure vanilla

pinch of sea salt

Chopped walnuts for topping (optional)

Directions

Heat up the chopped up dark chocolate in a small double broiler, mixing constantly until melted.  Put aside.

Then place the inside of the avocados (removing outer skin & pit), place it into a blender with all the remaining ingredients.  Puree until smooth.  You might have to mix everything with a spoon a couple of times and continue blending until everything is well combined.

Place in serving cups and refrigerate for at least 1 hour before serving.

You can top it off with your choice of fruit or nuts, if you prefer.
