Now for the recipe:
1 1/2 cups almond meal
1/2 cup organic honey
2 eggs (I prefer to use free run)
1 tbsp. coconut sugar
1 tbsp. liquid coconut oil
1 (15 oz) can organic pineapple rings
1/4 cup pineapple juice from the can
1/4 cup pineapple chunks, cut into bite size chunks
2 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
1 scoop Further Food Collagen Peptides Protein Powder
Preheat oven to 350 degrees F.
Using an 9 inch round non stick pan, coat the pan with coconut spray, play parchment paper to cover the bottom, generously spray the top of the parchment as well with coconut oil spray and sprinkle some coconut sugar over top, then add the pineapple ring covering the parchment paper (I used 8 small pineapple rings to cover the pan), sprinkle more coconut sugar over the pineapple rings. Put aside.
In a medium size mixing bowl, whisk together the flour, baking powder, baking soda & salt
In a small mixing bowl, cream together the eggs and coconut sugar, then add the vanilla, pineapple juice, coconut oil and honey and beat until well combined
Now add the flour mixture into the wet ingredients and fold well to combine, now add the collagen powder and chunks of pineapple, mixing well
Place mixture over the pineapple rings and bake for 30-35 minutes until tester comes out clean.
Let cool 10-15 minutes before flipping the cake onto a plate.
