Ingredients:

4 very ripe bananas (mashed)

1 1/2 cups all purpose gluten free flour

2 large eggs

2 cups fresh blueberries

1/2 cup pure maple syrup

2 tbsp. liquid coconut oil

1 tbsp. pure vanilla

1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. sea salt

Directions:

Preheat oven at 350 degrees F.
Grease 9x5x3 loaf pan with coconut oil (grease bottom and sides very well to avoid batter sticking to pan)

In a medium size mixing bowl, whisk together the flour, baking powder, baking soda & salt, put aside

In another mixing bowl, mix the eggs, maple syrup, vanilla and coconut oil, stir in the mashed bananas and gently fold in the blueberries to this mix, and finally add this to the dry mixture combining everything well with a rubber spatula

Place mixture onto greased loaf pan using a spatula

Bake for 45-50 minutes or until tester comes out clean

Remove from oven and let cool in loaf pan for at least 30 minutes before removing from the pan!
