INGREDIENTS

6 TABLESPOONS CHOCOLATE WHEY PROTEIN POWDER

3 CUPS QUICK OATS

10 DRIED PITTED PRUNES, CUT IN SMALL PIECES

1/2 CUP RAW CASHEWS, CRUSHED IN A BLENDER

2 TBSP. UNSWEETENED COCOA POWDER

1/2 TSP. CINNAMON

1 TBSP. MELTED COCONUT OIL

3/4 CUP ALMOND OR CASHEW MILK

1/2 CUP NATURAL SMOOTH ALMOND BUTTER

1/2 CUP UNSWEETENED SHREDDED COCONUT (For Coating)

1/2 CUP COCONUT SUGAR (For Coating)

DIRECTIONS

IN A SMALL BOWL, WHISK THE MILK WITH THE ALMOND BUTTER AND THE MELTED COCONUT OIL UNTIL WELL BLENDED.  NOW ADD CHOPPED PRUNES AND MIX WELL.  *YOU CAN MELT THE COCONUT OIL IN THE MICROWAVE FOR A FEW SECONDS UNTIL MELTED.

IN A SEPARATE MEDIUM SIZE BOWL, PLACE ALL THE DRY INGREDIENTS  (EXCEPT FOR THE SHREDDED COCONUT AND SUGAR) AND MIX TOGETHER

COMBINE THE WET INGREDIENTS INTO THE DRY UNTIL EVENLY COMBINED WITH YOUR HANDS. MIXTURE WILL BE STICKY.

REFRIGERATE FOR 30 MINUTES TO SET BEFORE FORMING INTO BALLS.

SCOOP SOME OF THE MIXTURE WITH A TABLESPOON AND FORM THE BALLS WITH YOUR HANDS (YOU SHOULD GET ABOUT 15 (2 INCH SIZE BALLS)

ROLL EACH BALL INTO THE COMBINED SHREDDED COCONUT AND COCONUT SUGAR

PLACE BALLS ON A PLATE AND REFRIGERATE FOR AT LEAST 30 MINUTES DEPENDING ON DESIRED TEXTURE.  REFRIGERATE UP TO 5 DAYS.  TO KEEP THEM LONGER, PLACE THEM IN THE FREEZER IN AN AIRTIGHT CONTAINER.
