INGREDIENTS

2 BANANAS

2 TABLESPOONS ALMOND BUTTER (OR ANY NUT BUTTER)

1 TEASPOON VANILLA

4 EGGS (I PREFER ORGANIC OR FREE RUN)

¾ CUP BROWN RICE FLOUR

1 TEASPOON BAKING POWDER (ALUMINUM FREE)

¼ CUP DARK CHOCOLATE CHIPS

 

DIRECTIONS

  • MASH THE BANANAS IN A MEDIUM SIZE BOWL ALONG WITH THE VANILLA
  • ADD THE ALMOND BUTTER, MIXING WELL
  • ADD THE EGGS AND BEAT WITH A WHISK, THEN ADD IN THE FLOUR AND BAKING POWDER, MIXING WELL
  • STIR IN THE CHOCOLATE CHIPS AND MIX WELL.  LET STAND FOR AT LEAST 5 MIN. BEFORE GRILLING

*IF BATTER IS TOO THICK, YOU CAN ADD JUST A BIT OF WATER TO THE CONSISTENCY YOU PREFER.  IF IT’S TOO THIN, ADD A BIT MORE FLOUR

HEAT PAN OR GRIDDLE WITH COCONUT OIL AND COOK PANCAKES, FLIPPING OVER ONCE YOU SEE BUBBLES ON THE SIDES.
