Ingredients:

3 very ripe bananas

3 eggs (preferably organic)

1 cup pitted dates, chopped

1/2 cup coconut flour

1/4 cup almond meal

1/4 cup unsweetened almond milk

1 tsp. pure vanilla

1 tbsp. cinnamon

1/2 tsp. aluminum free baking powder

1/2 tsp. organic baking soda

1/4 tsp. sea salt

3/4 cup halved walnuts (topping)

1/4 cup pure maple syrup (topping)

Directions:

Preheat oven to 350 degrees F.

Grease a 9x5x3 loaf pan with a generous amount of coconut oil, spreading evenly along sides and bottom

Walnut Topping:

In a small skillet, heat up the walnuts with the maple syrup and bring to a boil and simmer for 2 minutes. Let cool.

Banana Bread Directions:

In a medium size mixing bowl, mash the bananas, add the vanilla, milk and eggs and beat until combined.  Mix in the chopped dates with a spatula. Put aside

In another medium size mixing bowl, sift the flours, whisk in the salt, cinnamon, baking powder and baking soda, whisk well to incorporate all the ingredients.

Add the wet ingredients into the dry, mixing well with a spatula

Place mixture onto a well greased loaf pan and add the cooled walnut mixture on top (don’t worry if the walnuts and syrup are stuck together), it will still make your bread very flavourful.

Bake for 35 – 40 minutes until tester comes out clean.

Let cool for 20 minutes and enjoy!
