Fall is quickly approaching which means “pumpkin spice” is in the air!  Serve these delicious & healthy protein muffins for Thanksgiving and you will “WOW” your guests!

Made with wholewheat flour and sweetened with coconut sugar makes them healthy without any refined sugars or flours, the pumpkin flavour is not overpowering and the combination of adding cinnamon makes them the perfect Fall treat.  Did I mention they are high protein as well? Preheat oven to 350 degrees F.

Ingredients:

2 ripe bananas, mashed

1 cup pure pumpkin puree

1 1/2 cups wholewheat flour (preferably organic)

2 large free run eggs

1/2 cup coconut sugar + 1 extra tsp. for topping

3 tbsp. liquid coconut oil

1 tsp. pumpkin spice

1 tsp. cinnamon + 1 extra tsp. for topping

1 tsp. baking powder (aluminum free)

1 tsp. baking soda

1 scoop Further Food Collagen Peptides Protein Powder

1/4 tsp. sea salt

For the topping: 1 tsp. cinnamon & 1 tsp. coconut sugar (stir together & sprinkle onto each muffin)

Directions:

In a medium size bowl, combine the flour, baking powder, baking soda, salt, cinnamon, pumpkin spice (whisk well)

In another medium size bowl, whisk the eggs, then add the coconut sugar and whisk, now add the mashed bananas, pumpkin puree, protein powder and coconut oil, whisking well to combine

Now add the wet ingredients into the dry ingredients, using a spatula, mix everything thoroughly enough that the flour gets incorporated well

Fill greased muffin cups levelled to the top and sprinkle the additional coconut sugar & cinnamon

Bake for about 20 minutes @ 350 degrees F. (oven times may vary)

Makes 10 – 12 medium size muffins

Let cool & remove from muffin cups

Enjoy with a hot coffee or tea!!!
