RICOTTA & SPINACH, GROUND BEEF & SPINACH & SAUTEED VEGGIES WITH CHEESE
*YOU WILL NEED TO COOK 3 JARS OF (680ML) IF MAKING ALL 3 VERSIONS.

FOR RICOTTA & SPINACH INGREDIENTS:
1 TEASPOON SEA SALT
BLACK PEPPER, TO TASTE
500G BOX JUMBO PASTA SHELLS
450G FRESH RICOTTA CHEESE
1 BUNCH FRESH SPINACH, CHOPPED
½ CUP MOZZARELLA
1 EGG
2 TABLESPOONS BREADCRUMBS
DIRECTIONS
- SAUTEE THE SPINACH IN A MEDIUM SIZE FRYING PAN, COOK UNTIL WILTED, COOL AND PUT ASIDE
IN A MEDIUM SIZE MIXING BOWL, ADD THE RICOTTA CHEESE, EGG, SALT, PEPPER, COOLED SPINACH, MOZZARELLA AND BREADCRUMBS, MIX WELL
(READY TO BE STUFFED)
- AFTER YOU HAVE PREPARED THE MIXTURE FOR STUFFING,
- YOU CAN NOW START BY FILLING UP A LARGE SALTED POT AND COOKING THE JUMBO SHELLS 2 MINUTES LESS THAN WHAT THE PACKAGE INDICATES, DRAIN AND LET COOL ONTO A CLEAN DISH TOWEL TO ABSORB THE WATER, AT THIS POINT YOU CAN START FILLING THE SHELLS WITH YOUR MIXTURES
- PLACE THE STUFFED SHELLS INTO A LARGE BAKING PAN WITH SAUCE AT THE BOTTOM AND MORE SAUCE ON TOP, COVERED WITH MOZZARELLA & GRATED CHEESE
- COVER AND BAKE AT 400 DEGREES F. FOR ABOUT 30 MINUTES COVERED AND 10 MINUTES LONGER AFTER REMOVING THE FOIL.
FOR MEAT MIXTURE INGREDIENTS:
LEAN GROUND BEEF, COOKED UNTIL BROWNED AND DRAINED
1 TEASPOON SEA SALT
BLACK PEPPER, TO TASTE
1 EGG
1 CUP SPINACH, CHOPPED
½ CUP MOZZARELLA
DIRECTIONS
- IN A MEDIUM SIZE FRYING PAN, COOK THE MEAT ADDING SALT AND PEPPER AND SPINACH, COOK UNTIL BROWNED AND DRAIN, COOL AND PUT ASIDE
- NOW PLACE THE COOLED MEAT INTO A MEDIUM SIZE MIXING BOWL AND ADD THE SPINACH, EGG AND MOZZARELLA, MIXING WELL

FOR SAUTEED VEGGIES & CHEESE MIXTURE:
1 ZUCHINI, SHREDDED
1 CARROT, SHREDDED
1 ONION, SHREDDED
½ CUP RED CABBAGE, SHREDDED (OPTIONAL)
SEA SALT
BLACK PEPPER
1 EGG
MOZZARELLA CHEESE
DIRECTIONS
IN A MEDIUM SIZE FRYING PAN, ADD THE SHREDDED VEGGIES, SALT AND PEPPER AND COOK UNTIL SOFTENED, COOL AND PUT ASIDE
IN A MEDIUM SIZE MIXING BOWL, PLACE THE COOLED VEGGIES, EGG AND MOZZARELLA CHEESE, MIX WELL
